Matsuri - 10 locations in the central valley. One in most malls near the cinema. Since the pandemic they have become pop up kitchens mostly servicing delivery 2x1 orders. They also provide a Chinese food operation (Wok to Box) and various bowls (Pokes & Ramens) available only as app delivery. Food is generally OK, but nothing special. Check the locations on UberEats for specials.
Naccionsushi - An international chain in 11 countries, mostly in Central and South America. A very wide array of Asian and Asian Fusion food. This place is my choice if the hovia wants sushi, but I want something else.
Neither of these venues have independent chefs, suppliers or menus. There are plenty of other places, but I have not found any place I would consider special. Apart from tuna, pargo or sea bass, CR doesn't have a huge variety of seafood. It is hard to find these fresh in the central valley. The best I have had was at Nao Sushi Lounge at the InterContinental in Escazu and Na Praia in Escalante, but neither was worth the price.
IMO - Ceviche or whole cooked fish are the best seafood options in CR.
