If you do decide to stay in a "non-gulch" hotel be sure to email them to get written confirmation of their guest policy and make sure it is available to show them if you are challenged. I would not count on anything if it's not in writing. Someone might have been successful sneaking someone to their room but the security guy or front desk folks might not have been paying attention or didn't want to be bothered at that particular moment.
And even if they do allow guests, I really don't know if I would want to be seen bringing a hooker into a business or eco-tourist hotel. It's on me, but I am still a little uncomfortable doing that.
If the reason you are avoiding the gulch hotels is because of traveling companions or work expense reports, I would just take advantage of the many short time motels in the area.
I like your suggestion about getting something in writing from the hotel. Most of the indications I've gotten about these gulch hotels are that they are extremely noisy making it hard to sleep at night, not well maintained, and frankly the quality of women standing around most of these places is not all that great, as they tend to be on the older and heavier side.
I think I'm on the exact opposite end of the spectrum with my concept of hotels. I'd rather not be seen at a hotel where the clientele are often referred to as a bunch of rowdy old fat men with thick beards and no manners. I am a single guy, so I think the worst thing that happens to me if I'm seen taking a courtesan back to my room is that some elderly senorita walks up to me and attempts to scold me for violating her Catholic ethos. I don't have a wife to worry about, I don't have any business partners to worry about, I'm just me.
I haven't been to Costa Rica before, but when I was in the Mediterranean no one had an issue with me bringing providers back to my room. But then again the situation with crime was not so sketchy that they had security guards outside of the doors. But I don't want to hop on a plane for another 10+ hour flight again, I'd rather do this much closer to home. Do you think that the local hotels rather than the chains, that don't really cater to form tourists , might be more inclined to turn a blind eye? I don't care whether the front desk speaks English or not, I just haven't been thrilled by any of the reviews of the gulch hotels.
